Brewing Shan: calm is enough

Enough leaf, the right heat, short infusions. No ceremony required. Attention is.

Illustration: clay pot and a cup of Shan tea.

Shan tea does not ask for a precious pot. A small teapot, a pale cup to see the liquor, a scale or a measuring spoon — enough. Clean water, not too mineral.

A starting point

White: 80–85 °C, 3.5–4 g / 150 ml, 45–70 seconds. Green: 80–85 °C, shorter, 20–40 seconds. Black: 90–95 °C, 30–60 seconds. Then adjust. Old-tree leaf usually takes many infusions.

Brewing is housework. Do it properly, then sit down.
