From mountain to table

Ten steps, no miracle. Mountain, tree, pick, wither, make, oxidise, dry, sort, taste, control.

Illustration: withering leaves on bamboo.

Making Shan tea needs the right pick, the right wither, and someone tasting while they work. Old-tree leaf takes heat less kindly than people expect. Over-firing erases the mountain.

Time after picking

Leaf should not sit long in a bag. For green tea, the kill-green should happen while the leaf is still alive. For white tea, the wither must breathe. The detail is dull — and it decides the taste.

Shan Mộc records lots by garden and day. We do not blend seasons to fill a kilo. If a pick does not hold, it does not enter the collection.
